Ingredients:
1 tablespoon unflavored gelatin (Kolatin Real Kosher Gelatin)
1/2 cup sugar
4 eggs, separated*
1/2 cup fresh key lime juice
1/4 water
1 teaspoon grated lime peel
1/2 cup sugar
1 cup whipped cream, whipped
1 baked 9-inch pie shell
Directions:
Combine gelatin and 1/2 cup sugar. Beat egg yolks, lime juice and water. Stir into gelatin. Cook and stir over medium heat until it comes to boiling point. Remove from heat and add lime peel.**
Chill in refrigerator, stirring occasionally, until mixture mounds slightly when dropped from spoon. Beat egg whites until soft peaks appear; gradually add 1/2 cup sugar and beat until stiff. Fold into gelatin mixture. Fold in whipped cream. Pile into baked pie shell. Chill.
Serve garnished with additional whipped cream.
*This recipe uses uncooked egg whites. KosherEye suggests using pasteurized eggs in order to reduce the possibility of food-borne illness.
**A few drops of green food coloring can be added to give pie a pale green color.
