Egg Frittata with Potatoes and Peppers

A KosherEye Signature Recipe

We think of a frittata as a vegetable pancake! It is delicious with the addition of most any vegetable. Mushrooms, chopped asparagus or zucchini are some good options. Be creative! For a parve (non-dairy) version, omit the cheese.

Recipes:

1/4 cup olive oil
1 medium onion, chopped
2 potatoes, peeled and sliced VERY thin
1/2 cup chopped red, green, yellow peppers or a combination
6 eggs – pasteurized if possible
1 cup shredded cheddar cheese – optional*

Directions:

Preheat oven to 350 degrees.

Warm olive oil in a medium sized oven safe frying pan. Add potatoes, peppers and onions, sauté, until soft.

Beat eggs well, and add to mixture. Cover and simmer on low until almost done.

*if  using cheese, add 1 cup of cheddar – put pan in oven and bake uncovered until cheese is melted. If not using cheese, put pan in oven and bake uncovered for about five minutes.
