Emile Henry! Très Bonne!

We have prepared our Coq au Vin recipe in the Emile Henry Flame-Top 3.4 quart Braiser. This is truly the perfect cookware in which to make pot roasts, casseroles, stews and slow cooked side dishes or entrees.

Manufactured in France from Burgundy clay and other natural products, this versatile braiser pot can be used for a variety of culinary tasks, from cooking rice or vegetables, to making soups and casseroles, pot roasting and even baking cakes and breads. Its innovative ceramic technology is remarkably hard and flameproof; it can be used directly on a heat source, whether it is a stovetop or grill, and then can be placed in the oven to roast or bake.  It works well on high or low flames and actually is the perfect size and shape for testing a popular new recipe for no knead bread, which we plan to try soon.

We prepared the entire recipe for our Coq au Vin in our Braiser.  What a pleasure…we sautéed, browned and cooked everything—all in one pot! We placed the finished dish in the oven on warm, and then set it on a trivet on the table.  And, if any were left (which there was not!), we could have placed it right in the freezer.
