Now that we have discovered (OU) kosher D'Arbo Wild Lingonberry Sauce, we especially enjoy making these luscious copycat pancakes. Everybody loves these pancakes, which are very similar to crepes – and can be used as a blintz as well. Just add a cheese filling and your good to go. When you purchase D'Arbo, be certain that the OU is on the jar label.
Ingredients
3 large eggs
1 1/2 cups whole milk
½ cup half and half
1-½ cups flour
1-Tablespoon sugar
1 pinch salt
1-teaspoon vanilla
2 Tablespoons melted butter
½ cup confectioner's sugar
Lingonberry sauce or preserves
Directions
Beat eggs until very light- combine with 1 cup milk and vanilla
Sift flour, salt and sugar together
Whisk flour mixture into milk-egg mixture
Then add remaining half and half and melted butter
If consistency is too thick, whisk in more whole milk
Grease a hot griddle or crepe pan with butter, oil or margarine
Ladle in the batter creating a 6-inch diameter crepe
These pancakes are thin and will only need a minute or two on each side. Try not to brown- except on edges
Remove from pan - Fold each pancake in fourths. Top with lingonberry sauce and confectioner's sugar. If lingonberries are not available, top with strawberry or raspberry or your favorite flavors of fruit preserves
Serve warm.
