Copycat Kosher Long John Silver Fried Fish

As southerners, we of course love anything fried. This fried fish dish is based on a popular Long John Silver restaurant recipe...(pictured above) It is quite yummy-with a crispy crust and moist inside. When we "fry it up” both kids and adults just about lick their plates. We serve this with slaw, corn on the cob, french fries, or hush puppies, another traditional southern favorite. 

Ingredients

1 ½ lbs cod, or tilapia, cut into 6-8 pieces, rinsed and dried
3/4 cup flour
2 
tablespoons cornstarch
1⁄4 
teaspoon baking soda
1⁄4
 teaspoon baking powder
½ teapoon paprika
1⁄4 
teaspoon salt
3⁄4
 cup water or seltzer
Vegetable oil – for deep frying (oil should be at least 1” higher than fish)

Directions

Sift dry ingredients. Add water and whisk together well.
With tongs, dip fish in batter- covering fish completely.
In a pot or fry pan, heat oil to about 350 degrees..Add fish and deep fry about 2-4 minutes until golden.
Makes about 4-6 servings

Notes

The same batter recipe can be used for boneless chicken fingers. YUMM!
