Once you serve this, it will become a staple at you table. It is totally addictive! We use rectangular prepared pizza crust from Trader Joe's and flatbread such as Stonefire Artisan brand. Round crusts are fine as well. Or, if you have time, make your own crust.
2 rectangular or round pizza crusts or flat breads
1 cup Thousand Island dressing (recipe below)
1 lb. cooked ground beef
2 cups arugula (optional) washed and well dried
1-cup parve kosher cheddar cheese shreds like Daiya, or So Delicious
1 -2 finely chopped onions, caramelized
Thousand Island Dressing*
2 cups mayonnaise
2 teaspoons mustard (Dijon or yellow)
1/3-cup sweet pickle relish
½ teaspoon garlic powder
1 teaspoon white vinegar
Sauté onions until golden- about 20 minutes. Remove and set aside.
Add ground beef to same pan; stir over medium heat until fully cooked
When ground beef is ready, stir in caramelized onions. Let cook about 2 minutes more.
Spread Thousand Island dressing liberally on crust
Add and spread arugula if using
Add ground beef/onion mixture and place evenly over dressing and arugula layer
Top with parve cheese shreds
Bake at 400 for about 15-20 minutes, or until hot, crust is golden and cheese is "melty"..
*This dressing recipe makes more than you’ll need, but the extra is delicious to serve on the side, or as a green salad dressing. Store leftover dressing in refrigerator.
Optional additions to layer just under cheese: halved cherry tomatoes; kosher beef “bacon” like Jacks Gourmet Facon
