This copycat Kosher recipe was inspired by an Atlanta friend, Judy Lipis. Our family loves it!
4 skinless, boneless chicken breasts or thighs, pounded or sliced horizontally to about 1/4" thickness. You can also roll out with a rolling pin.
4 -8 slices pastrami
4 slices parve cheese, such as provolone or mozzarella
1/4 cup flour
1 cup Panko crumbs
1 clove garlic, grated
1/4 teaspoon black pepper
2 Tablespoons extra virgin olive oil for crumbs
2 eggs
1/3 cup olive oil for oven frying
Pre-heat oven to 350 degrees.
Put 1/3 cup of oil in an 8x8 glass or ceramic baking dish
Prepare chicken to about 1/4" thickness
Lay strips of pastrami on chicken; then add pieces of cheese.
Roll chicken (like a burrito) as tightly as possible. Secure with a toothpick or skewer.
Season flour with pepper and garlic
Mix the crumbs with 2 Tablespoons of olive oil, which will help them adhere to chicken.
Gently, roll filled chicken in flour, and then in bread crumb mixture
Place seam side down in baking dish; remove toothpicks
Bake about 35 minutes or until chicken is cooked through. Enjoy!
