Lovina Eicher writes the newspaper column The Amish Cook, which was started by her mother, Elizabeth Coblentz; it is nationally syndicated in more than 130 newspapers throughout the United States. She is the author of The Amish Cook at Home. Lovina lives in Michigan with her husband and eight children. "Baking is something my mother taught me, much like sewing and ironing, or gardening. KosherEye Cookbook Notes: What a wonderful cookbook! Delightful "homey" style notes accompany each of the recipes – very nostalgic and comforting – just like the recipes. We thoroughly enjoyed reading Kevin Williams' introduction to each chapter: very informative as to how each baking category relates to the Amish culture. The chapter on pies includes two basic pie dough recipes and the reader has the option of using either recipe. The first one uses a fat product that is not used by the kosher consumer. This recipe is not a "show stopper" for considering a purchase or using this lovely cookbook. We suggest either using a frozen pie crust, your own recipe, or a recipe that uses a combination of vegetable shortening and parve margarine. The second pie recipe uses milk as the liquid but that can easily be substituted by using a parve non-dairy product. The recipes, the pictures, the commentary...everything works well together in this terrific baking cookbook. It definitely has a permanent place in our cookbook library.
