Forks Over Knives—the film and the movement—is now a cookbook. Through its recipes, the book shares health secrets such as how to lose weight, lower cholesterol, and prevent, control, or possibly even reverse chronic and degenerative conditions such as heart disease and type 2 diabetes. The message: eating the right food is your best medicine. After reading this book and understanding its mission, thousands of people have adjusted their diets and cut out meat, dairy and oils.
The documentary Forks over Knives was first introduced in 2011 by American filmmaker Lee Fulkerson. The film advocates a low-fat whole foods, plant-based diet as a means of combating disease. Both the book, published in 2013, and the movie examine the importance of plant-based eating in maintaining vibrant health, energy, and ideal weight.
What does the title mean? Forks over Knives refers to the goodness of fruits and veggies, which can be forked, but anything that must be cut with a knife is NOT! Del Sroufe, the author, and the man behind many of the mouthwatering dishes, asserts that the Forks Over Knives philosophy is not about "what you can't eat, but what you can".
Chef Del along with his collaborators Julieanna Hever, Judy Micklewright, Isa Chandra Moskowitz, and Darshana Thacker offer 300 recipes made with fruits, vegetables, grains, and legumes. The recipes are both classic and contemporary, globally and seasonally inspired, and cover every meal of the day, including snacks. They are meant to be both delicious and supportive of good health.
The cookbook Forks Over Knives has been on the NY Times bestseller list (21 weeks+), and readers say that its filling and satisfying recipes are so good that they don't miss meat at all!
