by Joyce Goldstein University of California Press

For thousands of years, the people of the Jewish Diaspora have carried their culinary traditions and kosher laws throughout the world.
Joyce Goldstein presents a collection of over four hundred recipes from the kitchens of Mediterranean Jewish cultures.

With easy to follow recipes and her expertise, Joyce Goldstein celebrates some of the world's most flavorful cuisines. Delightful dishes include recipes for Spanish tapas, Provencal lavender/honey ice cream, gazpacho, baba ganoush, paella, pasta, Greek baked goat cheese in phyllo, to Moroccan couscous. The book presents a world of sun-drenched flavors sourced from kitchens from Europe to Africa.

The New Mediterranean Jewish Table is a guide to Jewish Mediterranean home cooking from areas such as North Africa, Italy, Greece, Turkey, Spain, Portugal, and the Middle East. It is filled with seasonal recipes—both classic and contemporary—focused on fresh vegetables, fruits, grains, legumes; and meat, poultry, and fish. Herbs and spices shine in her dishes. The book shares the story of how Jewish home cooks cherished their heritage and brought familiar ingredients, techniques, and traditions and taste with them as they journeyed to lands around the world.

In addition to being the author of numerous award-winning cookbooks, Joyce is a consultant to the restaurant and food industry. For twelve years she was Chef/Owner of the San Francisco restaurant SQUARE ONE, chef of the famed Cafe at Chez Panisse, visiting Executive Chef of the Wine Spectator Restaurant at the Napa Valley Culinary Institute of America. Joyce is a prolific cookbook author and magazine contributor, and she sits on the awards committee at the James Beard Foundation. Her latest book The New Mediterranean Jewish Table exemplifies her knowledge and passion for sharing beloved foodways with her readers.
