Sensational Summer Salads

Here are three unique salads that are perfect for summer entertaining. One Meat, one Dairy and one Pareve − something for everyone. There is no mayonnaise in any of these salads so they can stay on a summer buffet table with no fear of spoiling.  I hope you enjoy them.

The Sesame Beef Salad with Vegetables is a wonderful way to repurpose your Roast Beef or sliced steak from the night before. This is a salad full of vegetables and julienned meat in a wonderful spicy dressing.  It is light yet satisfying − the perfect summer lunch or dinner.

pearonionbluecheesesaladI adore the Pear Salad. The combination of juicy ripe pears, with crunchy candied pecans and the umami of bleu cheese are incomparable. Plate this individually as an appetizer or serve it on a platter as part of a buffet, your guests will be thrilled.

The Farro Salad is another fabulous buffet dish. I use a sweet mustard vinaigrette to flavor the Farro which works perfectly with the onions, olives, currants and herbs that are mixed in with it.
