Cabot of Vermont
We love this cheese and consider it a treat, especially at Passover, when a portion of Cabot’s popular Cheddar is certified kosher for Passover by the OU. (The special kosher for Passover run has the OU hologram on the label.) We consider Cabot kosher for Passover sharp Cheddar in a similar category to a limited production of fine wine…when available, we enjoy it.
Each year the Cabot creamery produces a small amount of OU Kosher for Passover sharp Cheddar. The cheese is aged for 10 months and has a deep, zesty, rich flavor. The OU certified sharp Cheddar is hard to find, but a treat when discovered. We enjoy Cabot’s regular sharp kosher cheddar year round. At Passover, it is particularly delicious and appreciated as a topping for matzo, or alongside sliced fresh fruit with a drizzle of honey.
The Cabot Creamery is a 1,200 farm family dairy cooperative with members in New England and upstate New York. As a co-op, Cabot is owned and operated by its members, which for Cabot are its farmers and their families.
