Texas Trash Dip

Put on your Mexican Sombrero, head south of the border and enjoy this creamy dip. A delicious dairy starter or perfect for a casual buffet. To notch up the heat, add some crushed, dried jalapeno pepper before warming. Serve it alongside a basket of corn chips.

Ingredients

1 (8 ounces) package cream cheese or lower fat neufchatel cheese, softened
1 cup sour cream. light or regular
2 cans (16 ounces each) refried beans like Goya or Eden with kosher labeling
1 packet taco seasoning mix such as Ortega
4 cups cheddar cheese, shredded
Optional: crushed jalapeno pepper

 

Directions

Preheat oven to 350 degrees. In a large bowl, mix cream cheese and sour cream Add refried beans, taco seasoning and optional pepper. Mix with fork.
Spray a 9x13 baking pan with cooking spray. Spread mixture evenly into the baking dish. Sprinkle all of the cheese on top.
Bake about 30 minutes, or until cheese in melted and lightly browned.
Serve warm with corn chips
