Chicken Meatball and Matzo Ball Soup

Danielle's recipes are influenced by her Ukrainian heritage. She loves to keep the memories of her great-grandmother and older family generations alive through her culinary adaptations of their recipes. Her recipe for Chicken Soup with Chicken Meatballs and Matzo Balls is a treasure.

Soup Stock Ingredients:

4 chicken drumsticks– skinned
4 celery stalks, chopped into thin slices
2 carrots, chopped into thin slices
1 peeled onion, whole
3 bay leaves
1/2  parsnip, chopped into thin circular slices
6 cloves of garlic, chopped into thin slices
1 cup sliced baby bella mushrooms
1/2 teaspoon salt
1/4 teaspoon ground pepper
6 sage leaves
1/2 teaspoon dried rosemary
10 thyme sprigs
Handful of dill, chopped
Handful of parsley, chopped

Directions:

Place chicken drumsticks in a large pot filled with water over medium heat. Add onion. Cover the pot and allow water to boil (approximately 20 minutes).

(Can make matzo balls and chicken meatballs in this time.)

5 minutes after the water boils add celery, carrots,  parsnip, salt, pepper, sage, rosemary, thyme, and parsley. Let entire mixture simmer for 20 minutes with a covered lid.

Add uncooked matzo balls and chicken meatballs. Add dill, mushrooms, and garlic.

Simmer for additional 20 minutes with covered lid

Matzo Balls:
Make matzo balls using 1 packet of Manischewitz matzo ball mix and follow instructions on box.

Chicken Meatballs:

Ingredients:

4 chicken breasts
1 egg
Pinch of salt
Pinch of pepper
1/3 onion, finely chopped
3 cloves garlic, pressed
1/4  cup matzo meal
Squeeze of lemon
1/2 cup of baby bella mushrooms, finely chopped
Handful of parsley, chopped

Directions:

Grind chicken breasts in food processor for a few seconds.

In a separate bowl add egg, salt, pepper, onion, pressed garlic, matzo meal, drop of lemon juice, mushrooms, and parsley. Add grinded meat and mix all ingredients together thoroughly.

Cover mixture in bowl and put in refrigerator for 30 minutes.

Form into palm size balls prior to placing in broth.
