Easy Corn Bread Stuffing

Ingredients:

1 1/2 cups (1/2 pkg.) Miracle Maize parve Corn Bread & Muffin Mix*
2 tablespoons parve margarine
1/2 cup chopped celery
1 small onion
2 eggs, beaten
2 cups chicken stock or vegetable stock
2 tablespoons dried sage
Salt and pepper to taste

Directions:

In a 9” baking pan, prepare the dry Miracle Maize Corn Bread & Muffin Mix following box directions for 1½ cups of mix (½ package). Cool and crumble baked corn bread 
Preheat oven to 350°F. Grease an 8" x 8” baking dish. 
In a large skillet over medium heat, melt the margarine and sauté the celery and onion until soft. 
In a large bowl, combine the celery, onions, 3 cups crumbled baked corn bread, eggs, chicken stock, sage, salt and pepper to taste; mix well. Place into prepared dish and bake at 350°F for 30 minutes.

Note:

Approximately 8 servings ( May be doubled) 
*Other kosher certified brands are also now available in supermarkets throughout the U.S., such as Fleishmann's Simply Homemade corn bread mix. We found several parve brands at WalMart
